Healing Potassium Broth

This is a traditional, powerful healing vegetable and herb broth than can be used during a cleanse or while fasting, or to rebuild and nourish during or after illness, surgery or childbirth. It is warming, comforting and tasty, and completely plant based. It is full of organic minerals including a lot of potassium, it is alkalising, nourishes the immune system, flushes the kidneys, helps regulate blood pressure, and supports the thyroid and adrenals. Many people do not get adequate potassium which needs to come from our diet, especially fruit and vegetables.

Potassium broth makes a great base for soups and casseroles, and is useful to have on hand in the fridge.

Ingredients: 

Makes about 2 litres of broth. 

The ingredients are inherently flexible, and you can use vegetables scraps, saving them in a bag in the freezer until you are ready to make the next batch. If you don’t have all the ingredients, just make it with what you have. 

Use organic vegetables when possible, especially when using the peelings only. If not using organic vegetables, use the whole vegetable and not just the peelings, as pesticides concentrate in them. 

 

2 potatoes with skin, washed, chopped (or peelings from several potatoes)

1 small sweet potato with skin, chopped (or peelings )

2 sticks of celery, chopped

2 onions, chopped

1 cup of any other vegetables or scraps, or pulp from vegetable juicing (optional)

1 - 2 cups of dried shitake mushrooms (optional for their powerful immune boosting properties, but any mushrooms are also good)

1 cup of parsley, chopped

Other fresh herbs, especially thyme, sage, oregano 

6 cloves of garlic (or more) chopped

1 inch of ginger root, chopped

1 inch of fresh turmeric, chopped

2 tbs seaweeds such as dulse, kelp, wakame, kombu

Optional herbs such as 1/2 cup dried nettles, 1 heaped tbs astragalus, 1 heaped tbs burdock root

1 tsp of sea salt, or add a little miso to each cup before you drink it. 

 

Method

Add all the ingredients to a large pot  or pressure cooker with 2 litres of water. 

Bring to the boil, and simmer with the lid on for 1 hour, or pressure cook for 15 minutes. 

For a broth, strain the vegetables out, and enjoy throughout the day. It is a powerful drink to start the day with, nourishing the adrenals far better than a cup of coffee! 

It can also be taken as a soup with the vegetables left in, or a puree with a little coconut milk added. 

The broth can also be frozen in ice cube trays, or larger containers in the freezer
